For the football-crazy protagonist of the hit flick ‘Bend it like BBeckham there was no bigger fear than the dreaded ‘aloo gobhi’!
It is a quick stir-fry at my café, with no onion, garlic or tomato. Simple, everyday food and loved in the lunch box too.

Ingredients
Cauliflower / phool gobhi- 1 medium flower chopped into florets
Potatoes- 2-3 medium sized, cubed
Ginger- 1 tsp ,grated fine
Green chilli- 1, chopped fine (or more if you like more heat)
Asafetida / heeng- ½ tsp
Cumin seeds/jeera- ½ tsp
Salt- 1 tsp
Red chilli powder/lal mirch powder- ½ tsp
Turmeric powder/haldi- ¼ tsp
Coriander powder/dhaniya powder- ½ tsp
Mango powder/aamchoor- ½ tsp
Chopped green coriander/hara dhania- 1 Tbsp
Oil- 2 Tbsp

Wash and chop the cauliflower and potatoes.
Heat oil in a wok/kadhai and add the heeng and jeera.  Add the ginger and green chilli and stir for half a minutes. Add the chopped potatoes and cauliflower.
Lower the heat to medium and add all the dry masalas (salt, red chilly powder, turmeric and coriander powder) except aamchoor.
Mix well so that the masalas coat the vegetables.
Cover and cook till the vegetables are somewhat done- a little more than halfway I’d say.
Uncover and stir fry on high heat for the last 5-10 minutes.
Take off the heat and add aamchoor and chopped coriander.
Serve with chapati or dal and rice. I even put in into sandwiches! Served here with Methi Pyaaz paratha.

  1. My all-time any-time favourite! I have memories of my mother wiping a slice of bread from the kadai in which alu gobhi was made… she always saved it for me. She still does!!

  2. We make in a similar way G. I love cauliflower or white broccoli as the devils say in my house. It is a very fool proof and a fuss free recipe. Love it.
