Baked Potato Wedges with Italian Herbs

Craving potato chips? Well, we all do at some point. But refrain and hold back for the calories within! Thanks to Dimple Makani’s excellent recipe here, we can now indulge in these with no ensuing guilt. And the olive oil gives them a heavenly flavour! These work well as starters and are in fact, any time goodies! I am having some with my coffee right now! And my boys love them! Good bye deep fried potato fries 😛

And super simple to make!!
All you need is

Potatoes, sliced- 5-6
Olive oil-2 Tbsp
Salt
Pepper
Oregano (I made with Mixed dried Italian herbs)

Wash the potatoes and slice them. Parboil for 5 odd minutes.

Drizzle with olive oil and salt and mix well

Spread on a baking tray

Bake at 200C till browned and crisp. It took me about 15 minutes. I flipped them midway.
Sprinkle the herbs and pepper. Enjoy!

  2. Hi, I absolutely enjoy your recipes and am a great admirer of your cooking but didn’t like this particular one. Potatoes are not proper size for the wedges and the wedges are cut like slices and not like wedges…also the browning is not uniform. 😦

      Thanks for writing in. You are right! I used whatever potatoes I had at hand. And the the browning, yeah. I need a bigger oven. 🙂
      They don’t look perfect, I agree, but tasted yum 🙂 🙂
