Quick and no fuss Coffee flavoured Cookies

Quick,no-fuss and coffee flavoured; what’s not to like! I sometimes bake a batch of these biscuits with our morning tea. Yeah, they are that simple, not to mention crisp and the refreshing espresso flavour. They come together in fifteen minutes (plus the baking time)

Here is what you need to get 25 gorgeous coffee cookies:
(Recipe sourced from Treat N Treat)

130 grams/1 cup Maida/All purpose flour
¼ tsp baking powder
1 tbsp instant coffee powder dissolved in 1 tbsp hot water (I used Nescafe)
85 grams/ 6 Tbsp butter, softened (I use Amul)
60 grams/ eaped ¼ cup of powdered sugar ( I weigh white granulated sugar and then powder it in the mixer-grinder)
¼ tsp vanilla extract

Preheat the oven to 160C.
Mix coffee powder in hot water and leave to cool.
Sift together flour and baking powder.
Cream butter and sugar, add coffee and vanilla extract.
Add flour and bring together to get a soft dough.
Make 25 small balls, flatten them and press down a little with a fork. Lay them an inch apart on the baking sheet.
Bake for 18-20 minutes. Cool on the baking sheet for a few minutes and then move to a wire rack to cool completely.
*To bake chocolate biscuits,omit the coffee and add a tbsp of cocoa
** To bake vanilla biscuits- Omit the coffee and increase the vanilla extract to a tsp

  1. I always have questions, Thank you in advance for answering them. This time:

    all 25 cookies wont go in so do I need to refrigerate the balance while 1st batch bakes?
    space between cookies?? Do they spread like those choco chip ones
    How about adding some choco chips to the dough?? choco chip-coffee.. yummmmm!

      Naah you can leave them on the counter as the others bake.
      They puff up but don’t spread much.
      Chico chip, why not?

      1. Made them in chocolate flavour yesterday.. With a slight variation.. used 4 tbsp amul butter and 2 tbsp peanut butter.. End result was superb (as expected with your recipes 🙂 )

  3. Hi ma’m. The cookies look wonderful. Thank you for sharing the recipe. I have one question: for baking cakes we keep the tray in the lower row and heat the lower rods, so for baking cookies do we do the same or different setting?

    1. Hi Iffat
      My oven is 45 litres and I bake everything on the bottom shelf keeping both the rods on.
      In a smaller oven, you might be able to bake with just the bottom one.
      But I always keep the bread/cookies on the middle shelf.

    All your recipes are really good. I tried making coffee cookies.. but the cookies got flattened too much..They became too thin and too big in size.. what can be the reason for that?

      1. Thanks for the reply. . Measurements were same. . But I baked at 180. That may b the reason.. Will try again soon at 160

  5. Hi garima, not sure why my batter is sticky. I added maida but still it’s too sticky. I used white butter. Do not have a blender so used moxie to mix butter and sugar. Any suggestions to salvage this?

    1. Hi Gemini
      I use a simple hand whisk to mix butter and sugar.
      Sometimes white butter has high water content and that may make the batter sticky.
      Try refrigerating for half an hour before baking. That should help.

    Does adding refined oil instead of butter to the cookies make any difference in the softness/ hardness of the cookies? Also have you ever tried making gluten (wheat/ maida) free cookies?

  7. Hi Garima, I never had success baking cookies earlier. But this recipie seemed easy. Just baked a batch and they are yummy. I put it on high rack and they started to burn a bit. then realised my mistake and removed the rack. So not burnt much. Anyway, i loved them not just because of the taste but bec it is soo easy! thanks a ton dear!!
