Mango Fudge

Mango and saffron complement each other so beautifully that each makes the other richer. Ever since I saw this lovely Mango Fudge on the my very talented friend, Sonal Gupta’s page, I knew I had to make it! I luckily managed to get some excellent dussehri mangoes in the midst of heavy monsoon. Biting into this was pure heaven- and such a simple recipe!!

Mango Pulp- 2 cups
Paneer/cottage cheese, grated coarse- 1 cup (the coarsely grated paneer gives the fudge a lovely bite. You may grate it fine to get a smooth and fine texture)
Mawa/Khoya,grated- 1 cup (in case not available, you may make using the instant mawa recipe below)
Sugar- ½ cup
Cardamom powder- 1 tsp
Mixed nuts, chopped- 3 Tbsp (I used just cashews)
Saffron- a fat pinch (grind it well with a tsp of sugar and soak in a Tbsp of warm milk)

Mix the mango pulp and sugar in a heavy bottomed pan or kadhai and cook till the water lessens and the mango pulp is cooked. This takes about ten minutes. Keep stirring and keep the flame medium.

Add the mawa and paneer and cook the mixture stirring continuously till it leaves the sides of the pan. Remove.

When it cools down to warm, mix the saffron and chopped nuts.
Meanwhile, grease some paper cups lightly with ghee or unsalted butter.
Put a tablespoon of the fudge into each cup and top with chopped nuts.
Chill for 5-6 hours and serve.


I am sharing my friend Jaya Amit’s recipe for Instant mawa/khoya.She does it in the microwave. The same can  be done on stove-top in a heavy bottomed pan on medium heat.

Fatafat/Instant Khoya

3 cups full cream milk powder (about 475 gms)
250 ml double heavy cream/ heavy whipping cream
1 can evaporated milk (375 ml)

In a large microwave safe bowl, whisk all three till smooth and creamy.
Cook on High in a microwave for 3 minutes. Stir and start again for 3 minutes.
Stir well to break any lumps and cook again for 5 minutes.
Check for consistency and cook for 3-5 minute depending on what texture you desire (slightly gooey / more solid.)
The total time will depend on your microwave’s power and capacity so stick to 3 minute cooking time to ensure desired consistency. If in the initial stages the milk mixture seems likely to overflow then stop the microwave for ten seconds and then start again.

Instant Chocolate Walnut Fudge Fiesta Friday#21

Instant Chocolate Walnut Fudge- in all of three minutes!!

Last night my plans of serving a fruity dessert of Mango cream vanished in thin air as the mangoes did a disappearing act from my pantry. Two teenagers in the house will do that to you. I decided on a dessert free dinner. But it was not to be, with it being a Friday night and a Football one at that! Demands for dessert started coming in at 11.30 PM- chocolaty demands at that!
My friend Jaya Amit does a mean chocolate walnut fudge in the microwave and that saved my day!

Here is a chocolaty and scrumptious dessert, done under three minutes.
Topped with cream cheese frosting, slivered almonds and choco-chips, this was the perfect start to the weekend!


Dry Ingredients

Milk powder  – 1 ½ cup
Cocoa  –  3Tbsp
Drinking chocolate -1Tbsp
Instant coffee powder –  Tbsp
Powdered sugar – 3 Tbsp
Roughly chopped walnuts- 2 Tbsp

Wet Ingredients

Vanilla extract – 1 tsp
Ghee (clarified butter) or butter – 1/2  Tbsp
Milk – 1/2cup
Water – 2 Tbsp

Take a microwave proof dish which is not very wide-mouthed. Mix all the dry ingredients well in a microwave proof dish. Add water make a thick paste and mix well. Microwave on high for 1 minute, remove and mix well.

Add milk and vanilla extract and mix well and microwave on high for a minute. Remove mix well.

Add ghee/butter. Mix and microwave in high for a minute.

Done!! Yes, it is that simple and quick!


*This gives a fudgy texture. If u want a firmer texture, microwave again for a minute on high.
*You can skip the walnuts to get plain chocolate fudge
*Check the consistency of fudge after the third minute and continue only if needed.
*If using a wide dish cut each time slot by 15 secs.|
*Milk powder can be replaced with one cup of khoya/mawa

To make it on stove top

Take a heavy-bottomed, non-stick saucepan.Heat the ghee/butter.Cook the khoya / milk powder mixed in milk for 2 minutes and then slowly add in the remaining ingredients.

Add 1/4th cup milk gradually while adding other ingredients. Cook for about 3-5 minutes depending on consistency desired. Add milk if you find the mixture too dry. Be careful to cook on low heat the whole time. Remove from heat and add the vanilla extract.
